ABSTRAK

Penelitian ini dilakukan untuk menganalisis variasi kualitas telur pada usia produksi berbeda antara umur 6, 12 dan 18 bulan dengan indeks yolk, indeks albumen, HU dan warna yolk pada telur itik Mojosari. Penelitian ini menggunakan 150 butir telur diperoleh dari BPTU-HPT Pelaihari, Kabupaten Tanah Laut, Kalimantan Selatan. Penelitian ini menggunakan metode observasi kuantitatif melalui pengukuran bagian indeks yolk, indeks albumen, HU (Haugh Unit) dan warna yolk. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan tiga perlakuan pada umur induk yang berbeda yaitu 6, 12 dan 18 bulan dimana 50 butir telur pada masing-masing umur sebagai ulangan. Dilanjutkan dengan analisis ragam yang menunjukan bahwa umur induk berpengaruh nyata (P<0,05). Hasil analisis menunjukan berbeda nyata pada umur produksi 6 bulan berbeda nyata dengan umur produksi 12 bulan, begitu pula dengan umur produksi 12 bulan berbeda nyata dengan umur produksi 18 bulan. Hasil penelitian menunjukan pengaruh umur terhadap indeks yolk, indeks albumen, HU (Haugh Unit) dan warna yolk. Kualitas telur konsumsi yang paling bagus dengan umur induk 6 bulan dengan rata-rata indeks yolk 0,841±0,011b, indeks albumen 0,244±0,008b, HU (Haugh Unit) 83,019±1,376b. Untuk warna yolk yang bagus berada diumur produski 6 dan 12 bulan dengan rata-rata warna yolk 14,980±0,020.

ABSTRACT

This study was conducted to analyze the variation of egg quality at different production ages between the ages of 6, 12 and 18 months with yolk index, albumen index, HU and yolk color in Mojosari duck eggs . This study used 150 eggs obtained from BPTU-HPT Pelaihari, Tanah Laut Regency, South Kalimantan. This study uses a quantitative observation method through the measurement of the yolk index, albumen index, HU (Haugh Unit) and yolk color. This study used a Complete Random Design (RAL) with three treatments at different parental ages, namely 6, 12 and 18 months where 50 eggs at each age were repeated. Followed by a variety analysis that showed that the age of the mother had a real effect (P<0.05). The results of the analysis showed that the production age of 6 months was significantly different from the production life of 12 months, as well as the production life of 12 months was significantly different from the production life of 18 months. The results of the study showed the effect of age on the yolk index, albumen index, HU (Haugh Unit) and yolk color. The quality of the eggs was the best with a brood age of 6 months with an average yolk index of 0.841±0.011b, albumen index of 0.244±0.008b, HU (Haugh Unit) 83±0191.376b. For good yolk color, it is at the age of 6 and 12 months with an average yolk color of 14,980±0.020.
