This study aims to analyze the organoleptic and microbiological quality characteristics of
fresh skipjack tuna (Euthynnus affinis) sold at Bauntung Market in Banjarbaru. The research
method employed a quantitative survey with non-probability sampling technique. Samples
were taken from three different sellers and tested for organoleptic properties (eyes, gills,
mucus, flesh, odor, texture), microbiological content (Escherichia coli and Total Plate
Count/TPC), as well as formaldehyde levels. The organoleptic test results showed an average
score ranging from 7.1 to 7.5 (on a scale of 1–9), falling into the "good" category according
to SNI 2729:2013. Microbiological tests revealed Escherichia coli MPN values of <3.6 and
TPC values of 4.11–4.36 log cfu/g, which meet food safety standards. The formaldehyde test
yielded negative results, indicating no formaldehyde content in the samples. Statistical
analysis using ANOVA showed no significant differences among treatments (sellers) for all
tested parameters (p>0.05). The conclusion of this study is that skipjack tuna at Bauntung
Market, Banjarbaru, has good organoleptic and microbiological quality and is safe for
consumption. However, improved handling is necessary to maintain freshness and safety.
Recommendations for future research include testing for other pathogenic bacteria such
as Salmonella spp. and Staphylococcus aureus, as well as histamine testing for more
comprehensive monitoring.
